    Grilled: Amy Wilkinson

Apprenticeships are becoming ever more popular in the UK, coming in many different forms from accountancy to human resources. We caught up with Amy, a full time chef at The Grand Hotel, who started out as a Level 3 Apprentice in Catering and Hospitality.

What inspired you to become a chef?

It started off as a hobby. I started cooking from a young age, got really into it and decided I wanted to do more of it. I took it up more seriously when I went to Secondary School.

How did you get involved in your Apprenticeship?

After I finished my GCSE’s I decided that I wanted to get serious about cooking. I applied to South Devon College and got myself onto a Level 3 Apprenticeship in Catering and Hospitality. From there I asked The Grand Hotel if they would be my placement. They said yes and I’ve been here ever since, it really was as easy as that!

Out of all the dishes you’ve made here, which one’s your favourite?

I can’t choose one, I love cooking anything and everything!

    What was your Apprenticeship like?

The chefs found ways to help me. They got me doing everything so I could gain experience in all areas of the kitchen. I did so much practical learning whilst I was here, I’ve learnt so much!

I was working as a chef four days a week at The Grand and then doing my coursework one day a week at college, the best bit was, I was doing most of my coursework by accident, just by being at work and doing the job I love!

What’s been your best experience in the kitchen?

Being able to lead a section is awesome! I really enjoy working in the starters section, creating small and tasty dishes that I love. I also love the sense of camaraderie in the kitchen; we’re always smiling, sharing jokes and ribbing each other.

Finally, any tips for budding chefs?

It’s hard work but if you really aspire to be a chef then you’ve really got to stick at it, even when it gets busy. You’ll never stop learning either, I’ve learnt so much in my time here and I’d recommend an apprenticeship to anyone who wants to learn a new trade.
