Richard Hunt, our Executive Chef, has been kept very busy over the past few weeks so we asked him to fill us in on his news...
He says: It's been a busy few weeks for the kitchen team and me, with lots of guests in the hotel and the food festival season in full swing. I've been very fortunate to have been asked to cook at a lot of the local festivals this season, including Flavourfest in Plymouth (a 3 day 'foodie' event) and Fishstock in Brixham last weekend. Jim Portus and the guys from the Quayside Hotel in Brixham put on a great event, which is all in aid of the Fisherman's Mission and - after a lot of hard work - £10,000 was raised this year.
It's quite amazing to arrive at the fish quay in Brixham and see the whole place tranformed in less than a day, from a fully working fish market to a festival site and I must confess I feel a bit guilty as I'm probably the least prepared chef for these types of events. I run around the kitchen the night before, grab some ingredients and whip something up on the day!
The whole idea, I believe, is to make the food as simple as possible but really fresh and tasty. Hopefully that will encourage the audience (you guys!) to try things at home, without having to spend 4 hours shopping for strange ingredients and then 3 hours to decipher the recipe and cook it! By then the wine is open and we really have lost the will to carry on!
Come and see me at Abbfest, held at Fermoys Garden Centre in Ipplepen, on Saturday, 22nd September and, hopefully, you'll see what I mean. I'm cooking Brixham lobster, crab and mackerel. Should be a lot of fun.
